Should I be worried about this mole between my eyes (top of nose)?

Looking back on pictures, I didn’t have it last September. First noticeable in November (first picture) vs now (last picture).

it doesn’t hurt and isn’t itchy. I don’t think it’s gotten any bigger but more pronounced I would say?

Only thing you can really do is get it checked out. Are you sure it's a mole though and not a blackhead ?

Yeah definitely. I don’t get blackheads and it feels raised.

I have been on the dermatology waiting list for another issue for 15 months now, so I’m not holding out much hope on getting this looked at sadly

How old are you OP? Ignoring the internet, you can absolutely develop healthy new moles later in life. I had a new one pop up in my late 30s that looked a lot less regular than yours!

To skip the waiting list, you could get it checked out via a private dermatology clinic, I was charged somewhere in the region of £100 for a private consult on mine. There are also mole checking services run by Boots which will take a picture of the mole, send it to a dermatologist and give you a professional opinion on whether you need to push for a more urgent referral.
