Don't know how to describe this really.

After sex on Sunday night which was a bit tight,not very lubricated and we do use condoms,i woke up on Monday feeling sore down below.

It feels like it is inflamed and the area is sore and probably because of the rubbing.
It seems like there is an extra piece of skin.

Any one have any ideas?

Could it be one of your labia minora?

How sore is it?

Could you have maybe a soothing bath, with some very mild oil in it, or use some lube to soothe it?

Please use lube in future, or don't have sex until you're wet enough .

Where is the extra piece of skin? at the entrance or around the lippage?

that sounds exactly what it could be.

It just feels stingy(sp) and uncomfortable.

There are all sorts of flappy bits round there that you wouldnt normally notice. I reckon that something has just gone slightly swollen due to friction, have a salt bath and use NSC idea about the lube.
