IBS or not? No idea how to fix this

Back in October I started experiencing nausea, mainly at night I’d wake up and be awake for hours (also panicking as I have emetephobia). There were some changes to bowels but mainly the nausea. I really reigned in my diet to be very bland but couldn’t see any pattern and not much I did seemed to help. I stopped stressing about it and went back to my typical diet and actually things improved. A few months later I had a really stressful time with my child being in hospital and I started experiencing diarrhoea. Eventually after initial stool tests and blood tests the Dr says they think it’s IBS. I just cannot see a pattern though. I’ll have a few weeks when I’m in good form and eat whatever I want really and everything is good totally normal. Then it comes back. A few days ago I woke up stomach totally churning, so much gas, diarrhoea, exhausted, night nausea. I’d been on good form the night before and had dinner 5 hours before going to sleep no sign of anything at bedtime. Just woke up feeling awful. This pattern seems to repeat every month or so. I have no idea how to fix it as I can’t see the pattern and eliminating foods doesn’t seem to work. My family are all getting ready for a nice a day out and I’m lying in bed just wondering how can I even solve this problem.
