I know no one can give diagnoses, but I was hoping someone could give me some leads/suggestions for things I could investigate myself.

I have spent the last year having blood tests, nerve studies, ultrasounds and physio. Just received a letter saying nothing found. Thyroid fine, bloods normal (apart from positive ANA). I feel desperate.

My symptoms are
Agonising pain in my joints (RA ruled out as no inflammation) creeping up to my knees or elbows randomly
Constant discomfort from either ice cold/boiling hot sensation in hands and feet, regardless of weather
Numbness in hands and feet
Extreme fatigue
Thirst
Randomly breaking out in terrible hives (not related to food or environment)
Horrendously itchy hands and feet (no fungal issues)
Low blood pressure and vertigo/dizziness

Please help! I'd be so grateful for some

What were your exact 'fine' thyroid bloods op? Were thyroid antibodies tested or just TSH/T4? Did you have vitamin B12 and folate tested?

Get the doctor to refer you to rheumatology. You can have sero negative RA. Or there are other certain types of arthritis, autoimmune diseases with normal bloods.

Have you had your cortisol checked?
