Low fat easy lunch ideas

I’ve been advised for medical reasons to eat several small low fat meals rather than 3 regular meals a day pending some medical tests.

I can mange with ideas for breakfast and dinner when there is more time to cook but am struggling to come up with lunch ideas both for the office and when working from home but time pressed. I’m not a big fan of soup. At the moment would often have a prepackaged sandwich from Pret A Manger or the local supermarket but these may no longer be suitable.

low fat doesn’t seem to be the dietary fad at the moment so Google searches have thrown up lots of low cal or low carb options which aren’t quite the same thing. Would welcome any ideas from the Mumsnet hive mind

I’m veggie, I also like soups, so my ideas of lunch are probably wildly different to yours but could you not just quickly make a low fat sandwich? A slice of meat with a thin spread of low fat mayo for example.

Tuna with a drizzle of balsamic over a few leaves of bagged salad is quick and simple. I think John west even do ready pots of tuna salad with couscous or rice or something that should be low fat.

Reduce fat prawn cocktail with rice cakes.

This is fast and simple for an occasional lunch.

Leftovers from the night before? Or have breakfast for lunch, so do overnight oats or something but eat them at lunchtime on the go instead of in the morning.

I love a rice salad: 50g brown basmati with chopped:
Gherkins
Dried fruit
Lettuce/rocket
Tomatoes/sun dried tomatoes
Cooked vegetables
Avocado
Herbs
Etc

Plus peas & sweetcorn
Chickpeas etc

You get the picture, just chop up anything suitable that you've got in. I guess for low fat protein add chunks of chicken, or tofu. You could marinate them to give a stronger flavour.
