Digestive issues driving me mad post covid

Before anyone says ‘see a doctor’ - I have & had tests but nothing concrete has been found and covid is the only ‘diagnosis’ so far. Potted history:
had covid 3 months ago
had diarrhoea towards end of testing positive as well as a lot of digestive noises, loss of appetite, a bit of nausea, exhaustion, some non specific aches and pains.
GP ran stool/bloods. Calprotectin was in 300s and crp slightly up (8 when 5 is the top it should be). All other bloods fine inc h pylori.
Got referred to gastro privately. By then stool was fine but a retest of calprotectin was in the 2000s which coincided with getting reflux.
had colonoscopy and small bowel mri - both normal.
omaprazole helped but when I came off it restarted so put back on it. Took about 2 weeks to kick in properly and only been back on it 12 days.
Gastroenterologist said he’ll do a gastroscopy if it doesn’t abate, but he’s not rushing into it.
I also have some back pain which I’m not sure is related or not (as I have always had a bad back) but I had an abdominal ultrasound (which I paid for independently) which showed no issues w pancreas, liver, gallbladder or kidneys. The radiologist said she had 6 months of stomach issues after covid herself.
The issue now is that I’ve just come back from holiday where I was fairly sensible w food although not having my normal ‘diet’, and I have diarrhoea agsin worse than I had at the start! i don’t feel ill, am still hungry.
have GP appt tonight who will prob cite covid again - but I am worried they’re missing something else. I should prob get calprotectin tested again and maybe bloods?! I want to be assertive w the GP and not just take the ‘it’s covid’ reassurance.
I’m in early 50s and peri too to boot! Not on hrt yet.
