Eating sadness and misery on pathetic bread aka low potassium diet help!

Anyone experience of this?

My mum has been put on one having kidney problems and dangerously high potassium a couple of weeks ago. Actually looking at her blood tests with the haematologist today her kidneys are better than they were in dec (and potassium normal!) so hopefully she can stop it when the kidney docs see her again....

Till then she has a very proscriptive diet sheet and is following it obsessively- which has she has already lost 6lbs in 4 weeks before she went in ( from a teeny 9st 9) is just not what she really needs...

This diet includes soaking all veg in water and cooking them like your grans Xmas sprouts till all the pleasure and nutrition has gone.... Max 2 portions fruit/ day ( and portion is not what you'd think- one measly little satsuma or 20 blueberries, no oranges or bananas). No salt, no condiments except vinegar , 2 yoghurts a week.... You can have eggs and cheese ( she's eating cheese on nimble bread as or says no granary... As I say - misery on pathetic toast).

No soups.... No strawberries, fish and chicken and pasta/rice cooked in the blandest way ( no spuds) ......ugh!

Best option that she fancied eating for tea today was a small steak (4oz) with a but of tomato, and... The highlight.... Onion and cucumber in vinegar!

We couldn't even find anything in the hospital canteen she'd eat ( we were ages in out patients).

I'm going to get them to weigh her on 9th and hopefully tell her not to be so obsessive. Bloods aren't so bad and she needs not to get malnutrition! She has no appetite but I wouldn't if I had to eat that...

Meanwhile can anyone help with any nice things to eat?
