Carrot Cake (from 80s Blue Peter)

8oz carrot
lemon juice
8oz wholemeal flour
1 & 1/2 tsp baking powder
2 tsp cinnamon
4 oz marg
4oz clear honey
4oz demerea sugar

180 C

Melt together the marg, sugar and honey, make sure that the sugar has dissolved.
Seive together the flour baking powder and cinnamon.
Mix the honey mixture into the flour mixture.
Mix the lemon juice with the grated carrots and then mix the carrots into the flour mixture.

Put into a loaf tin and bake for one hour.

Well, I normally work away from home on a friday SaF, so I booked the day off but I am either just going through a busy patch, or business itself is picking up.

I don't like to complain, I don't mind in some ways but I am just so very tired and it is relentless, so I can't get ahead of myself. It has been a hectic term for DC's, which doesn't help. My customers are lovely. But everything is swamping me. The house work is suffering and that rattles me a little.

I also have callous memories...
On with it... throw me an omelette when you make one saf... I don't have time to cook ta xx
