Does anyone know how to create custom shortcuts on iphone?

I understand that you can create custom shortcuts to automate an action, but I can't figure out what to enter in the various steps!

Does anyone know how you make a short cut that opens an app (I can get this far), chooses something from the main menu, and then chooses something from within that menu and toggles it off or on? It sounds like it should be so simple, but I can't find a good walkthrough of actually entering the steps.

What I want is a shortcut that opens the Watch app, chooses the Privacy item from the menu, and then chooses the Fitness Tracking option and toggles it from on to off, or the reverse. Or two shortcuts, one to turn it off and the other to turn it back on.

Even more ideally, I'd like to set it to do this at a specific location in the room, and to turn it back on when I leave that location, but I don't mind starting the shortcut myself if that's what I need to do.

I find that the watch counts arm movements when playing an instrument as steps, which messes up my step count and fitness tracking! (in a good way, kind of, as it might say I've done 10,000 steps when I have just sat there and done some music practice, but when I really am trying to get fitter, I can't let myself cheat like that!!)

thanks, that's mostly about Mac OS. I've seen similar videos about iOS but I still can't work out how to add the items I need. Maybe I need to download a lot more shortcuts and try to look through the steps or something. It seems a lot easier on Mac OS!
