My new job has an off-grid office in a hut, it has a solar panel so I can run a laptop but I also need to be online for at least part of each day. I wondered about getting a dongle but am not clear on how they work - are there many differences between dongles or can I just pick the basic one offered by my mobile provider?

AFAIK, they work pretty much the same way .. i think you can use the basic one (typically usb dongle with sim) offered by mobile provider, assuming there is mobile data coverage in your location.
