How to change email address for iCloud account on iPad and iPhone?

Why are these things never simple??

I have just set myself up a new email account and have managed to transfer everything over and updated the email address for my Apple ID. Simple and easy.

I am now trying to change the email address relating to my iCloud account and for some reason I can't even work out how to log into the iCloud account section to change my email address and password. I hope that this is actually nice and simple and I am missing a really obvious trick.

I want to delete my old email address so need to move everything over to my new address and the drafted iCloud account is the only thing that won't change!

Does anyone know how I do this?

I meant to say, it gives me the option to delete account (and presumably I could then set up a new iCloud account), but I am loth to do so without knowing if that will delete everything off my iPad and what is saved to apple ID and what is saved to iCloud.
