Why is when I add type to already there text sometimes the new letters eat up the existing leeters and sometimes they just squeeze in?

I think you have probably accidently pressed scroll lock, usuall top right corner about the += button. Press it again and see whether it stops

If the letters are getting 'eaten' you can also press the 'insert' button and it'll stop
