...would you prefer some plants or a gift voucher for the local garden centre?

She has specified pink, for chalky soil, I'm trying to choose some but am completely ignorant.

Can't help with the choice of plants, but could you take her to the garden centre to choose? Have a coffee and a cake while you're there, make a bit of a treat of it?

Obviously doesn't help if you live miles away from your mum

Plants - why not choose on line and have them delivered to her?

Lots of pinks can be a bit mauvish, I've tried to pick some nice clear pinks. The following might be possibilities for you;
sidalcea "else heugh"

penstemon "evelyn"

papaver orientale "karine"

hemerocallis "stoke poges"

dierama - bit grubby looking but lovely habit.

Those clear pinks would look lovely planted with grey foliaged plants - something like artemisia ludovciana
