Borlotti beans, so they look gorgeous but what do I actually do with them?

After reading Sarah Raven's veg book I've grown borlotti beans. They are starting to mature now and they really look beautiful.
I read that I should leave them on the plant until they are fully mature, then they are used as a pulse.Just not sure what to do with them! I doubt the DCs will eat them but DH and I will eat anything.
