Wow - my lettuces are amazing - what do I do next?

I just picked up a tray of tiny lettuces - lollo rosso and a green one and Wow are they flourishing, six times the size and vibrant.

What do I do next?

I've a feeling I just pinch out leaves to use and let the rest keep on growing?? Or something else??

Yeah exactly, take the outside leaves and leave the rest to grow a bit longer. You can only usually do this for a couple of weeks max at this time of year as they'll bolt at some point, but in this April weather you never know, you might get a few weeks!
