Houseplant that needs care but is easy to care for

This is for DM who is suffering from parkinsons and therefore frail and forgetful, she has carers.
If it was the right time of year, hyacinth bulbs would be perfect.
I am after something, that she can be encouraged to look after and will be interesting to watch grow, also will be quick to develop so will hold her interest.
Ideally some thing that I can order on-line

What about windowsill edibles - microgreens, cress, herbs, that sort of thing.
And you could easily sub in new ones when she kills the old ones.
