Roses : don't know what type I have, when and how hard should I prune

Please.

All different types it seems... The only ones I can distinguish is a rambler and a climbing rose and I know my climbing rose you don't viciously cut back.

I've had the all years and I've never cutt them right down. Should I go for it this year and if so when.

Years ago on a gardening programme they took three roses.
One was 'properly' pruned by an 'expert'
One was pruned by an amateur gardener doing their best
One was cut straight off with a chainsaw
Later on in the season there was no difference between them.

A professional gardener friend of mine says that at the gardens of the horticultural college where he trained they were just trimmed back fairly randomly, chopping off any dead or ugly bits, this is what he still does and what he advises.
The rose-garden where he manages a big historical estate is lovely.

If my rose has one strong stem that is long above the ground, do I cut down to that one stem or cut higher so there are more stems.
