Help with Beetroot plants

Can a vegetable expert please tell me what has happened to my beets please? They seemed fine and dandy a couple of days ago but now this.
(I’ve only started growing veg this year and I have no idea what I’m doing 😆)

Mine do that, I assume sun and drought. Then they grow new leaves and carry on as normal. You have nice fresh leaves growing in the centre
