How much space do I need to leave between an apple tree and another species ( non fruit)

Depends on the other species and what size your apple tree is and it's rootstock. I grow strawberries at the feet of my dwarf apple trees and blackcurrants about half a metre away in a row. I also scatter wildflower and green manure seeds all around them. Generally once an apple tree is established I'd say it could cope with most things grown round it as long as they weren't too deep rooted or too tall and likely to compete for light. I would then make sure to feed and mulch too so they aren't competing too much.

I was also coming to say well it depends- look at the indicated spread for both your intended trees/ cultivars and seem if you really really do have enough space

What were you thinking of?

What is the other species? Impossible to judge without know what it is.

Agree with others that it depends. I am interested in the permaculture idea of fruit tree guilds. As such I grow strawberries, comfrey, and garlic around the base of my apple tree. It is young but appears happy. The comfrey feeds the tree (chop and drop) and attracts pollinators, the garlic is supposed to deter some pests, the strawberries taste nice... !
I will probably add some more things as time goes on. I have had things planted close by to this tree from its first planting, I did not follow the advice to keep 60cm completely clear and it has established just fine.
