New to gardening - Replanting flower plants

Hi I'm completely new to gardening.

I've seen several articles suggesting loosening the tuber from the old pot and shake off the soil from the old pot before replanting the plant into a the hole dug in new pot. Don't quite understand why is this necessary. Wouldn't it be easier and less disturbing to the plant iand the root if the old soil surrounding the root is moved over to the new pot?

It is because the old soil is devoid of nutrients. Getting rid of it and teasing out the roots will encourage them to find their way into the new soil
