Does anyone know about pruning olive trees?

We have a mature olive tree that's looking good and strong but it has a couple of extra long straggly branches sticking out the top end which are interefering with our desperate desire for tidiness. Is it ok just to cut them off?

Don't know, but isn't this the wrong time of year? Ours has just started to produce baby olives (for the first time - I'm soo excited!!!)

It'll be putting all its energy into producing fruit, so might not be able to cope with the stress losing limbs! Might be best to wait until later - but google it, I've seen stuff un the RHS site about olives, I'm sure.

Not at all an expert but I know that my mum randomly hacks bits off hers with no regard to season and it's ridiculously healthy
