What vinegar should I be using to pickly my beetroot please?

Pickling vinegar. But if you want to keep it for longer than a week or so, you should boil the pickling vinegar (you house will stink!), and pour it, boiling, over the beetroot. This way, it will last for months in the fridge (as opposed to a couple of weeks).

Thanks. Surely the smell of vinegar can't be any worse than the odours that lurk most of the time! I obviously meant pickle and not pickly..

Well, apparently vinegar is supposed to be a smell neutralizer, once its own smell has died down!

And brilliant for constipation.
