New shoots are just coming through, I have dug out what I can but it is running under and around my patios so question is do I let it grow before spraying it with roundup or just go for it where I know the roots are underneath? Any other tips for getting rid of it?

I was have advised to let it grow up a stick til you have a good head and then glyphosate that - if it is growing strongly and absorbs a lot then it gets further into the roots. May take a few goes to get rid of it.

I can't remember too well what we did with them, not wanting to use chemicals. I think DH put some old carpets over the areas and killed them this way. It took months.

You can't kill it. Well, would involve very very deep digging. Can you put a membrane over it and put gravel/stone chips over that?

I think the bottle tells you to spray on the new leaves so I think you would be better to wait for it to grow through a bit.
