End of season bean ideas

Been away for a few weeks so we haven't been able to pick our runner beans. Just picked 150 beans. Some are huge and tough. Others smaller. Ideas please. Don't want to waste them. Thanks.

Do you have much freezer space? I'd probably just blanch and freeze them. If I had time I might slow cook them with tomatoes and freeze. If you don't have freezer space try salting them for using over the winter.

I don't think I'd bother with the huge tough ones though. Maybe dry the actual beans to use as seeds for next year?

well, the bigger ones I would pod - the beans inside are really nice! The smaller ones can be frozen.

How do I prepare the beans inside the pods?

How do I prepare the beans inside the pods?

Take them out, and put them in a chilli.

I add them to a tomato sauce for pasta, or put into soup. If they are dried and hard , they will need soaking first , but if they are nice and plump, just cook and eat ( they are a kidney bean )

Yes, don't bother blanching and freezing really tough runners - you'll get a mouthful of veggie shards. Podding them is a better plan!

You can make a piccalilli (sp?) type thing, which is yummy: www.bbcgoodfood.com/recipes/1411639/green-bean-and-mustard-pickle

Will the kidney beans keep for a week or so in an air tight jar?

I would think so - not tried myself, as I use them up as they are podded. They may just dry out a bit, and need a soak . They would freeze, or cope in the fridge.
