Radishes come up pretty quickly but might be a bit peppery for toddlers (although my DD2 likes them). Cress is fast as well. Salad leaves are pretty quick.

Night scented stock is a good flower for children to grow, I think it flowers about 4-5 weeks after sowing. Also it's very easy to grow from seed.

You can grow all these things in containers if that's any help?

Tomatoes are fun, cress for indoors, buzy Lizzie's or geraniums are easy to take cuttings from and grow quickly, runner beans.

You can get some fast growing lettuces. You might struggle to get them to eat any.

Why not try planting plants instead of seeds
You can still plant seeds if you want. Just plant them in pots and send them home with the child for them to do at home.

Nasturtiums are good and you can eat them too.
