Do I really need two? I do have the room but would prefer only one as I could then get a more decorative one.

Any tips welcome

You can have as many as you like.

If you want quicker compost you have to turn it. You can just add to the one all year and then life once a year; put the uncomposted stuff back in and the composted stuff straight onto your beds.

Lift once a year, not life once a year. Sigh.

some people say you should have 3. one that you are adding material to, one thats rotting and one you are using the compost from.

Yeah, that's also called the top, middle and bottom.

Pee only works if there is lots of fresh stuff in, so gather all your trimmings, layer it with cardboard or shredded paper, and then add urine and water and it acts as an activator. If you are just adding bits here and there it's not going to do an awful lot. I don't think you can add too much, but you don't want it to stink so if it's running out the bottom you need to add more shredded paper or strips of cardboard and give it a turn.
