Does it matter if my garden tap drips quite heavily for one week...

...I am going away, and having fitted one of those hose timer things, there is pretty constant dribble of water where the metal threading on the tap has bitten into the plastic threading of the connector on the water timer.

The ground under the tap has gravel to drain it, but I don't know it I should just not bother and let my new turf just fry for a week while I am away.

Why do these things always happen just before a holiday?

I wouldn't worry about it for a week - if you have new turf I'd definitely want to keep it watered this week! Maybe use a bit of plastic to guide the dribbles down to the gravel away from the house so it doesn't splash against the wall
