Total novice, can I do a sensory garden with pots and baskets that ds (3) can join in with?

We have some of those wooden tub/pot things and I want to try out some gardening with ds who is just 3. I saw a sensory garden at a play centre and would like to pot some small plants and herbs with him but don't know where to start or what to do. Any suggestions? Thanks!

Bamboo is soft and wooshy and robust, mint and lavender smell lovely and cope well with containerisation. Lamb's Ear(Stachys byzantina0 is soft to stroke, alyssum smells of honey.

Rosemary would also be good.
