HELP I think my spinach is bolting. Can I still eat it? Can I stop it bolting

It looks like seed heads are coming in the top. Was planning to make a curry with spinach in it, can I still eat it. If I cut it back (its perpetual spinach I think) will I save it?

You can eat it but I think it might taste a bit bitter. Frankly it grows that fast you might as well start again with new seed. Water it a bit more next time I think.
