Study abroad visa nightmare.

DS is half way through his year abroad. First semester all good. He got back a few days before Christmas and then started to make arrangements for second semester in different country (Estonia).
He could only get a visa appointment for today!! Given Christmas and everything. He should be going next week!!
obviously this can’t happen. But the guy at the visa place said he needs to have his flight booked no less than 30 days from his next appointment. All ok, we can do that. Guy looked at his documents and didn’t say anything about them.

my question is - to avoid any more delays (which frankly would be impossible to get past)…
does anyone know what documents need to be apostilled?
Is it ALL of them (flight ticket, insurance, bank statements) or just any ‘official documents’ such as birth certificate etc.

I feel sick at the thought of further delay,
so any advice gratefully received.
