Ideas needed for cooking sweet potatoe please...

I like sweet potatoe and normal potatoe mashed together.

Will try sweet jacket potatoe, tried sweet potatoe wedges but not too keen.

I think I would really like a curry with sweet potatoe in it, but think it needs meat in it too for dp. Any nice recipies?

Any other ideas?

I've got a whole bag to get rid of...

Not quite what you asked for, but I have a recipe for pumpkin/sweet potato/butternut squash (delete as appropriate) muffins around somewhere if you're interested. They are very nice and last for a few days.

I made curry using sweet potatoes, told dh there was chicken in it, he was none the wiser.

Sauteed onions, garlic, ginger, chopped sweet potato, threw in a tin of chickpeas, then a tin of coconut milk, added garam masala.

Put in 2 tablespoons of cruchy peanut butter, and a bag of spinach.

Was lovely, and quick

They are nice grilled with slices of halloumi, a squeeze of lemon and rocket or anything else salady you fancy.

Knotty - yes please to muffin recipe, are they fattening? They cant be as bad as normal muffin like choc chip can they?

I do them in thinnish slices under the grill, and they cook quite quickly, but think I first tried this on the barbecue.

Cubed and then grilled on a skewer with pizza oil drizzled over. Pizza oil is oil infused with herbs and dried chilies, can't remember if Tescos etc have it. Just looked, Waitrose have a couple of possibilities.

I made Nigella's 'double potato and halloumi bake' the other day, thought it was nice.

I often make soups with sweet potato (goes well with other root veg like butternut squash, I also make one with red lentils and red bell peppers), and soup is always good if you have a lot of something to use up!

Look up a pumpkin soup recipe and substitute sweet potato. Much sweeter and more reliable than pumpkins, which can often be disappointing. I like adding a bit of cinammon. Smile
