Low Sugar Cake

I'd like to bake a cake to take on holiday, so it needs to be able to survive the journey (I could pop the cake tin into a cool bag if it's hot) and ideally it needs to last a good few days when we get there.

My DH is diabetic, so a low sugar cake would be good, so he can have a piece as well.

Any ideas?

Apple cake would be good as it lasts well, is quite dense so can take some knocking about, and if you find the right recipe using dessert apples, sultanas and cinnamon you shouldn't need too much sugar.

There was a recipe for 'no sugar' cake on the last bag of Jordans bran I bought - but it was full of orange juice and sultanas.

Apple cake sounds nice, I'll google it.
