Quiche ideas please

Fussy dd1 has, after 15 years, decided that she will now eat quiche. She is a vegetarian (as are all of us but dp) and hates mushrooms. What else could I use to make a delicious veggie quiche, other than onions or leeks?

I invented a nice one the other day: 2 grated courgettes, fried in a teaspoon of oil til soft, mixed with greek yog and 2 or 3 eggs, with feta and pine nuts on top

Haddock no good, I'm afraid, as it's not veggie.

Grated courgettes and feta a possibility - if I lie to her about the feta!

Beep - am not convinced by celery and walnut. Don't the walnuts go soggy?

Smoked cheese is lovely. Oven dried cherry toms too (with feta if you can convince her!). My mum does one with onion, cheese and spuds, which sounds odd but is lovely!

Lastly there is a beautifull ottolengi (sp) recipie for a caramelised garlic tart. The recipie is a faff but boils down to simmering lots of garlic cloves in a water vinigar combo till soft and liquid sticky and reduced. Then combine with goatscheese, eggs, cream fraiche and herbs (though i used feta and smoked poacher, eggs and yoghurt as that's what i had and it was lovely!)

Yum. I love smoked cheese - would never have thought of putting it in a quiche.

The garlic one sounds great but Ottowhat'shisname's recipes always seem like a real shenanigins (sp?).

They are a bit, and that put me off for a while (that and the fact that some sound pretty unappealling) but that one is really worth the effort...though i did simplify it to meet my needs. Also i just made it on shortcrust as puff would have ment buying it and thus going to shops specially

His black pepper tofu thing is fantastic too, if you like spicey things that aren't quiche Actually maybe it was only that spicy because dh made it. I think that called for about twelvety different soy sauces but we just made do with tamari and some awefull one that we struggle to use as it contains sugar [shocked] [shocked]

Tomatoe (small ones so they roast a little and go caramalised a bit while cooking) with spinach. I'm thinking of trying it with asparagus as I often roast asparagus with tomoatoes and it's delicious so figure it will be good in quiche too.
