My mum used to make cream cheese - will that do? I don't remember the details but can ask her if you like. It involved hanging a muslin bag of sour milk over a bowl and letting it drip through for a few days. Don't know if she did anything else though. And as nickyfen says, if you want hard cheese you'll need a press etc.
