Leftover chicken ideas

Bought an extra large chicken in Tesco today so consequently have half of it left over.

What shall I turn it into for dinner tomorrow evening??? Oh and DD2 is allergic to dairy products!

I had lots of lovely ideas until i read that your ddis allergic to dairy! now i'm stumped!

Chicken risotto.
It's so easy, I wouldn't use arborio rice, basmati will do.

Make a sauce of tomatoes, onions, mushrooms, any other veg you fancy. Add shredded chicken and heat thoroughly.

Serve with rice.

Well assuming the chicken is cooked and straight out of the fridge, I'd say when the rice was nearly ready.
I'd probably drop in soem frozen peas before that too.

Lightly fry the chicken with onion and maybe garlic before adding it to the rice. I'm assuming that the rice is fully cooked and seasoned.
I love seasoning risottos, I grab anything at hand, white wine vinegar, lemon, salt and pepper, fresh parsley at the end, maybe a touch of white wine?
