extra egg yolks

I've done it again - made a batch of meringues without planning what to do with four extra yolks. Don't have a food processor so am not making mayo by hand, custard - well, eating out tonight and tomorrow and it won't keep, hollondaise - bit ambitious. Don't have an ice cream maker so reluctant to make them into custard for ice cream...

I know they freeze - I still have some left over from last time! What would be great is a cake recipe which uses up a couple of extra yolks and I can freeze - any ideas at all? Doesn't have to be cake, but just something practical...

Do try hollandaise - me and dd (aged 6) made some last week - easy peasy! Believe me, if I can do it, you can too!

Hmmm - but how did you use it? did it keep? We would only get to eat it on Sat, don't know if it would benefit from hanging around till then - either the yolks or the actual hollandaise.

Sorry mm; I didn't realise you wouldn't be able to use it till Monday. I know you can freeze egg whites but not sure about the yokes. Perhaps make a lovely, rich white sauce and then freeze that. I'm sure someone else will pop on with more interesting options!!

I just use them to make scrambled eggs /omlette/frittata

Actually a fridge clean out is in order so frittata salad and meringues with ice cream and berries sounds nice
