Any fail safe recipes for za'atar?

I have sumac and I'm sure some oregano and marjoram, fresh thyme not dried.
I will try this recipe as below if no-one can advise
I imagine the means dried herbs

1/4 cup sumac
2 tablespoons thyme
1 tablespoon roasted sesame seeds
2 tablespoons marjoram
2 tablespoons oregano
1 teaspoon coarse salt
Preparation:

Grind the sesame seeds in food processor or with mortar and pestle. Add remaining ingredients and mix well.

Right -

2 tablespoons roasted, cooled sesame seeds
2 tablespoons dried thyme
1 tablespoon sumac

Combine and store in tightly closed jar or freeze.

Do you reckon I can dry my thyme by tomorrow?

I have been in the cupboard, I have sesame seeds, oregano and sumac.
I think I might have to pop to the spice shop tomorrow

Stick it in the airing cupboard!! Does anybody still HAVE an airing cupboard?

I really fancy it now.

Madhur J suggests sprinkling it over yoghurt cheese/soft cheese and drizzling with olive oil - good with flatbreads I bet.

I'm going to marinade my chicken in it, after rubbing in olive oil and the serve with a fattoush salad [yum]

And the thyme outside looks fairly dry so I reckon I'll whizz some of that to put in the marinade

Mmm I love fattoush. Don't eat chicken though, so can't pinch that idea!

That sounds lovely! Have wanted to try it for a while but can't get my hands on sumac.

Incidentally i have managed to get my hands on some ras al hanout. Any suggestions for how to use for a veggy?

I can get sumac in Waitrose now - Barts Spices do it.

You can get Za'atar in Waitrose. I did the Nigella recipe with it on Monday and was a bit disappointed tbh (but may not have marinated for long enough).

The Za'atar itself tasted just liked the nasty big standard dried thyme you get at supermarkets.

Might be much nicer made properly from scratch though.

I made the za'atar as per the recipe in OP.
Marinaded the chicken, grilled it and had with fattoush salad.
Absolutely delicious

Having a rest and cooking tried and tested for the next few days
But will re-visit a Vietnamese Cabbage and Chicken salad next week
I'm going to buy Ottolenghi the cookbook for some new ideas
