Peel,grate and squeeze (no sniggering at the back there,please.)
Mix with chopped mint,very finely chopped onion,garlic, bit of sugar and thick Greek yoghurt.
Great with curries,grilled meat,other salads,anything.
We all love it!

using one cucumber chop do not remove skin.
using other cucumber remove inside flesh and make cucumber juice mix with chopped cucumber and stuff empty cucumber,,, delicious!

meant to say this is receipe for stuffed cucumber for I am stuffed to know what else to do with two cucumbers thanks for the laugh! and some more

what about thai salad ?

using a veg peeler , slice cucumber into ribbons, shred cabbage , red onions. make dressing with white vinegar , palm sugar , nam pla(fish sauce)) & lime juice. pour over and mix ,leave to marinade a bit and YUMMMMMMEEEEEEEEE. I sometimes griddle steak with thai seasoning and chop into bite size peices and mix with salad.
