Have tried loads, with sour cream, with yogurt, with poppy seeds, but they all come out a bit heavy textured compared to my usual light yummy baking.

Can I adapt a regular vanilla recipe and sunstitute l;emon juice for vanilla?

thanks

The recipe for lemon drizzle cake on here is supposed to be tip top. Don't know if it's light because I haven't tried it but the reviews are good.

Think it's MrsMars Lemon Drizzle. Look it up.

marslady's lemon drizzle cake. It's fab - it does make a huge amount...I often halve the quantities if I don't want quite so much.

Lemon drizzle is gorgeous but its not the lightest there is. For lighter, I would go a standard Viccy Sponge route and add lemon zest to the mix. Sandwich if required with a mascarpone/lemon curd mix.

Lemon Yoghurt Cake - this is nice and light.
