Vegetarian lunchbox ideas please!

I've moved offices, and I intend to bring in my own lunch (apart from anything else, I'm a bit far from the catering options around here).

I need ideas of lovely vegetarian lunches which won't require heating or anything like that - there is nothing in the kitchen but I have my own kettle.

Thanks!

Tortilla and salad. Or a fish paste (if you eat fish) made from sardines, quark and lemon juice.

Roasted veg with feta in pitta bread

Couscous salad - I throw in toasted pine nuts, basil, sultanas, roasted peppers then dollop natural yog and harissa on top. Lovely !

Dd1 likes hoummus and rocket in a wholemeal roll - or tiny hoummus pot with carrot sticks and pitta.

I like a packet of oatcakes with a mini Philly pot, celery and radishes.

Big pot of Greek salad.

vegetable samosas
mushroom risotto

You could do nice meze or antipasti salads.

Falafel, couscous salad, houmous, mixed leaves with feta.

Or mozzarella and tomato salad, olives, leftover roasted Mediterranean veg.

On colder days a Thermos flask filled with nice lentil-y soup with a big chunk of bread and cheese

Sorry, completely forgot about the thread. Thanks, fab ideas - are samosas hard to make? And can I eat mushroom risotto cold? [stupid face]

Now I'm hungry! I had 3 quorn sausage rolls for lunch...must do better...

samosa recipe

They can be as easy or as complicated as you like.

I eat risottos cold too.

Gosh, even the pastry sounds easy and I always thought it was rocket science!

Pasta with pesto and canned cannellini/butter beans/ chickpeas

Brown rice with veggie/bean stew - I really like it cold!

Tupperwear of salady bits, container of hummus and a wrap or pitta or two

Pasta with hummus (it's really nice, honest!)

Pasta with tomato sauce and cheddar mixed in

Pasta with cream cheese and broccoli

Hard boiled eggs and salad

Wrap/pitta/pizza base/homemade dough grilled with tomato sauce/pesto and cheese

Tin of chickpeas or any bean you like, with any nice dressing or pesto or pasta sauce!

All really easy to prepare - I don't think pasta takes much longer than making a sarnie :-)

Oatcakes cheese celery and grapes
Smoked mackerel pate (homemade have a great recipe if you eat fish)with crackers and a side salad
Smoked salmon with a salad

I'm getting hungry!

Will try the pasta with hummus - sounds intriguing, but this is from a girl who eats pasta with baked beans. Well I like it!
