I can freeze bechamel sauce.

Which means it's no longer a PITA when DS wants macaroni cheese.

I use Delia's all-in-one method.

It only takes a few mins and is easy peasy.

I don't think my method is technically 'all in' but I do find it easy.

Melt butter in pan.
Put flour in butter and 'fry' for a bit
Then pour all the milk in.
As it comes to the boil it thickens, so keep stirring.
That's it.
Then you take 3/4 and put it in the freezer for another day

It was a revelation in my house when I discovered that hot milk is the key to making thick, delicious, lump-free white sauce for cheese sauce. Makes all the difference. Hardly any stirring required...
