waitrose apple-stuffed pork leg steaks

A new Waitrose opened near me, and since they had things on sale, I shopped there for the first time.

And I loved what I bought - pork leg steaks with a spiced apple stuffing.

Of course my budget is not going to allow me to shop there very often, but it should surely be easy to re-create these on my own, but I am rubbish at doing that. Never seem to get the right cut of meat or the right proportions.

Anyone want to suggest a recipe (or really, it's more directions, I guess, of how to do it)? Anyone tried the ones I mean?

pork leg steaks, with a spiced apple stuffing, topped with apple butter and wrapped in English bacon. Somehow the stuffing is in there, but it's not been toothpicked together or anything. When I have seen pork steaks, they are just flat things that would not be stuff-able!! What exactly am I looking for that would be stuffable and then wrappable in bacon?

apple stuffing contains: 70% apple, demerara sugar, breadcrumb, orange juice, milled orange zet, ground spieces (nutmet, cinnamon, clove).

caramelised apple butter contains unsalted butter, 37% apple, demerara sugar, chopped rosemary, cornflour, sea salt.

you could get a boned pork loin and roll it up with the stuffing inside

I'm not even sure I know what one of those is! (I'm such a crap cook). But I will have a look. Thanks.

All I know is that these were legs because it says so on the packet, and they were in individual little portions.

I think you need to go to a butcher.

I used to go in, ask for a pork loin for x number and then could he bone and roll it and I would be back in ten minutes.

then I would untie it at home and put in the stuffing,. Mine was lemon grass and honey.

sounds a bit daunting, butcher's!! So, really stupid question then, is loin what would be listed as leg?

The little portions I had weren't tied up in any way, just sort of wrapped around the stuffing somehow - hard to desribe.

But pork loin rolled and stuff does sound nice, I might have to learn how to do this!

maybe they did a boned leg and wrapped it around that

leg might be cheaper than loin

I wish I were less embarrassed about things like talking to butchers! I might have been able to explain what it was and ask what the best cut was. But I'm usually shopping at the supermarket anyway, when there are only whatever cuts are available there. Hmm. I have to figure out the stuffing, too.
