preserving ginger - have lots.

I have about 6 'stalks/root' of ginger that i cant use but not sure how to rpeserve it. Any ideas? Dont have lots of oils to preserve it.

Ideas appreciated.

Ginger freezes pretty well. You can then grate it into your recipes straight from the freezer. Because it has virtually no water in it, it doesnt 'freeze' like other things but it does keep it from going mouldy/bad.

Make ginger beer! The alcoholic kind. I've been making some home brews recently and been amazed how simple it is. It was discussed in a thread here recently called "I've just finished decanting my gins"...sorry i can't link, on phone so it's nearly impossible' or you could google ginger beer recipie.
