gooey chocolate cupcakes

how can i make chocolate cupcakes that are gooey in the middle and what can i ice them with. Had some at work that an amercian lady made and they were lovely, but she's not around to ask the recipe.

my fan over is a bit lively i think, so my cakes seem to come out a bit hard - not good

also not too dark choc, so good for ds who is 2 as well?

you could make them but scoop out the top and dollop in some nutella once they're cooked?

I always turn my fan oven about 20 degrees less than the recipe recommends and turn the cakes whilst they're cooking
