Easy tasty salmon recipe

DSIL coming round tonight for dinner. Don't finish work till 6pm and then have to shop, feed kids etc so looking for something quick and nice to make. Thought of salmon as fancy something healthy. Any ideas?

I had people for dinner a couple of weeks ago and just kept it simple -

Wrap salmon fillets with pancetta or palma ham, then roast in oven. Serve with some lovely jersey royal potatoes and lots of salad and crusty bread.

I like salmon baked on top of whole spring onions in foil, snipped up once cooked,with a big bowlful of fluffy rice and loads of soy. Broccoli/pak choi on the side. Yum.

Add a chopped chilli to the spring onion before cooking if you're feeling brave.

I do variation of Delia's salmon with pesto crust (it's in one of her how to cook books). She uses pecorino but can't be arsed to go and buy that just for one recipe so use good parmesan and tastes lush, super quick and always looks impressive!

Well you've probably finished eating by now , but I always recommend coating salmon fillets in a mixture of equal parts soy sauce and chilli sauce. Cover with foil and bake for 15 mins on about 180 (fan oven). Remove the foil and bake for another 15 mins until sticky. Delicious with rice or noodles and some broccoli and spring onions (Great minds taffetacat )

Top fillets with a cajun rub (mine's just a Schwartz extra spicy one) shove under grill, serve with tortilla (the bread kind) homemade salsa and creme fraiche.
