I am craving soup!! But have no space to freeze the remains of the minestrone I was planning to make

How long do you reckon it'll last in the fridge? (If it manages to get that far that is . . . could eat a whole pan full at the moment!)

It should last two or three days at least.

I'd say a week.

The "fresh" soups you buy must be that age by the time they reach their use-by dates.

If the minestrone is all vegetable then it'll be OK for a day or so longer than if it contains any meat. When meat or fish is in a dish I tend to think it's best to finish it up within a couple of days.
