birthdays and other special occasions means pancakes in our house- the special person gets to choose their toppings beforehand (noramlly chocolate spread or strawberries).

Sorry should have said DH is a savoury breakfast person ( why, I don't know, pancakes would be perfect for me!)

Or I like Mexican style breakfasts...generally seem to be based on potatoes, tomatoes and eggs.

No reflection on your cooking TOOTIRED, but why not take him to a "Greasy Spoon" cafe. Bacon, Eggs (at least two), sausage, black pudding, tomatoes, baked beans, fried bread, hash browns etc (just don't be tactless and ask him about his life insurance before hand). That would be the best 'fathers day' present in our house, and it gets you out of cooking. If yours is anything like our nearset Greasy Spoon, you could have yourpancakes there as well, with no washing up!
