We have an excess of milk. I can no longer fit in in the fridge. What can I make with 2litres of milk???

I always just freeze it, because I'm lazy.

LouIsWaltzingMatilda · 15/06/2010 09:29

No room there either.
My bosses keep forgetting that we have a milkman and keep buying milk.

Rice pudding then?

LouIsWaltzingMatilda · 15/06/2010 09:34

That is what I thought of but I made that last week when they did this.
The kids will think I am fab if I make it again since dessert is only on special occasions.

Cauliflower cheese?

mountainmonkey · 15/06/2010 09:46

Cottage cheese! Heat it up to just below boiling then curdle with lemon juice and strain through a sieve to get the curds.

This method also works for making cream cheese for desserts.

Pancakes/toad in the hole (won't solve all of it, but it's a start). If you pre-make the batter last thing at night and do pancakes for breakfast then you will be filled with a smug Domestic Goddess glow all day.

Dilys - good tip re making pancake batter in eve, keep thinking how nice it would be to do pancakes for Sat/Sun breakfast but am never organised enough at that time in the morning...

LOU - I'd make anything with a cheese sauce, eg cheesy fish (white fish with cheese sauce, can add veg and mash potato for topping and finish in oven) or macaroni cheese (again can add veg); milkshake might be nice (bananas or strawbs or both). If you don't fancy too much milk in a sauce, you can always use the milk to make a creamy-type gravy, ie make gravy and add milk to it instead. Or use in soup?

LouIsWaltzingMatilda · 15/06/2010 10:11

moutain - is that how you make it? I did not know that.

I have never made toad in the hole. I have a packet of yorkshire pudding batter that tesco gave me as a substitute.

Might just make the little darlings pancakes for breakfast or pikelets I think.

I made them smoothies for breakfast and that got rid of about 1.5 litres.

Make paneer. It's magic!

mountainmonkey · 15/06/2010 11:21

Ooh, yeah paneer is yum! Have recently discovered the joys of curdling milk!

How about Confiture de lait, if there's any left you could always make banoffi pie.

1l milk
500g sugar
Vanilla essence

Cook milk and sugar over a low heat ro about 1.5-2 hours while stirring every 5 mins until thick and caramelly. It' ready when it will coat the back of a spoon. Add vanilla essence to taste.

It's handy for Jamie Oliver's chocolate mole tart.

Enjoy
