This is my favourite, everyone who tastes it asks for the recipe

GARY RHODES? BANANA BREAD CAKE

3 large ripe/over ripe bananas
8 oz self raising flour
6 oz caster sugar
4 oz unsalted butter
2 eggs
2 tablespoons golden syrup
Pinch of salt

Mash the bananas in a mixing bowl with a fork and beat in all the remaining ingredients until completely combined, you can use a food processor.

Spoon the mixture into a greased 2lb loaf tin (I prefer to use a pre-shaped greaseproof paper liner). Bake for 1 ¼ hours at 150 C until risen and firm to touch. Leave it to rest for 10-15 minutes before turning out. The cake can be served warm as a pudding with custard or ice cream, or leave to cool.

This is ideal for using up some over ripe bananas and then freezes well wrapped in foil if you have no immediate need for a cake!
