Can anyone advise me - will my dough be ok if I make it in the morning and leave it proving all day until tea time??

yes, but let it rise for 20-30 minutes, no longer, then put it in the fridge.
It will taste better than if you cook it straight away, but my rise uncontrollably.
If you have a chance to knock it back after a couple of hours, then do!

I have left it all day (outside the fridge) and it needs lots of flour to roll it out, gets holes in more easily and the odd air bubble, but you can get it much, much thinner. Dare you......

taffeta I found the dough easier to handle after I'd frozen it. It hadn't defrosted all the way so was really firm - way easier to get the bases nice and thin and round (mine usually end up amoeba shaped!).
